Blue Matcha, Butterfly Pea Powder
Blue Matcha is made from the petals of Clitoria ternatea, a climbing vine of Southeast Asia. The flowers are harvested, dried and milled into a vivid blue powder. In Thailand the same flower is steeped into nam dok anchan, a blue drink served with honey and lime, and in India it is a holy flower offered in daily puja.
Why It Changes Color
The blue comes from anthocyanins, plant pigments that react to acidity. Add lemon or lime juice and the blue turns violet, then pink. Watching the cup change in your hands is part of the ritual.
- Naturally caffeine-free – unlike green matcha, it does not stimulate the nervous system, so it suits any time of day, including the evening.
- Mild, gentle taste – earthy, slightly floral and herbal, sometimes with a hint of green pea or fresh grass. Much softer and less bitter than green matcha, almost neutral in a latte.
- Rich in anthocyanins – antioxidants that help neutralize free radicals, the unstable molecules that damage cells.
- Calm and clear in tradition – in Ayurveda the plant is valued for calm without drowsiness, and for memory and focus. Research on these effects is still young, so take them as tradition rather than proof.
Vegan, gluten-free and free of common allergens: pure flower powder, nothing else.
How to Use Blue Matcha
Whisk half a teaspoon into a little warm water, then top up with hot or cold plant milk for a blue latte. Blend it into smoothies, iced drinks and juices, or bake with it: it is one of the few natural blue food colorings, so a pinch is enough to turn a cake, a pancake or rice blue. Add lemon at the end if you want the cup to change color.
For the whole dried flowers as a tea, choose butterfly pea flowers.
